This is the Easter bunny cake I made for Easter this year. Actually, I made two of these cakes. I purchased the Wilton Bunny Cake mold for this cake. The cake I decided to make was a lemon coconut cake. I wanted something decadent but also light and refreshing like spring. I filled the lemon cake with a lemon curd filling and added some coconut flakes to it. Once the cake was stacked and filled I made my butter cream and iced the cake. Instead of adding the usual vanilla extract to the butter cream I added lemon and coconut extract to it. This worked out really well it was a nice touch to the cake and not over powering either. After the cake was iced I sprinkled coconut flakes over the cake. This gave the cake a fun fluffy bunny feel. I added the facial details with colored butter cream. Overall the cake was very moist and a big hit at Easter.

This is a little belated but here is what I made for our Easter celebrations. First, I made about 60 cake pops. The cake pops were made with carrot cake and cream cheese frosting. I shaped them into eggs and dipped them in white and pink chocolate. After the chocolate dried I added the decorative details onto them. I did this by painting corn syrup onto the cake pops then poured the sprinkles onto the corn syrup. It was very easy to do and I got great results from it. I also used a few different colored candy writers to get some additional added effects. The cake pops were a big hit and looked really cute. I individually wrapped them and put them in a little Easter basket for display.
This is a cake that I made for a baby shower last night. It is a two tiered square fondant cake. The bottom tier is a vanilla rum cake with a butter cream filling. The top-tier is red velvet cake with chocolate filling. This is one of the few times I have made a vanilla rum cake. It came out very moist and delicious. I made a glaze to put on the cake and it really accented the cake well.
The colors of the shower were navy and white with accents of yellow and orange. I colored the fondant to coordinate with the shower. It was a more clean, simple and modern feel rather than the traditional shower cake.
I think I will be adding the rum cake to my cake choices more often. What do you think?
This is a barnyard themed birthday cake for Ava’s 2nd birthday. It consists of four tiers. The bottom tier is cow print with Ava painted in red. The flavor of this cake is chocolate cake with a chocolate fudge filling.
The next tier is a red painted gingham print with a red bow. This tier is lemon cake with a lemon curd filling. The next tier is covered with green fondant with a white picket fence. There are also sugar barn animals in-between the fencing. I also, added green buttercream around the edge to give it a grassy look. This tier is red velvet cake with a chocolate filling.
The top-tier is the barn. I used the Wilton house pan to create the shape of the barn. For this tier I baked a pound cake as you must have a sturdy cake for the house pan to keep the shape. I covered it with fondant and added the green grassy buttercream around the edges of the house. I also added the sugar chicken to the barn.

This order is for a Halloween party tonight. I created these Jack O’ Lantern cake pops for a festive Halloween look. I used chocolate cake and chocolate frosting. After making the cake balls I dipped them in orange chocolate. The orange chocolate is a vanilla flavor. Immediately, after dipping them I placed a green tic tack on the top for the stem of the pumpkin.
Once the candy shell dries I melted dark chocolate and put it in a disposable piping bag. I then piped on the scary Jack O’ Lantern faces. This combination is supper yummy. I hope they like it at the party!
I will also be making another batch of Halloween cake pops this weekend so I will be sure to post them.

Well I baked my “first” cake yesterday. I put first in quotes because I have baked many cakes and pies before but this is the first cake using my new techniques. I did this cake for practice.
I used two 8″ aluminum pans and baked for about 30 minutes on 350 degrees. I made a white cake with a strawberry filling and buttercream icing. I practiced some piping around the edge and some designs in the center.
Here are a few pictures of the cake. I cut a slice out so you could see the inside filling. The taste came out pretty good but I still need more practice on the frosting and design.
